#51: Two Dogs Mexican Brown (take 2)

Back to my AG confort zone...

I did the Yazoo Dos Perros recipe a while back... It tasted all right, but it was my first AG and I had some temp control issues.

This time I had better control of the temps, but I had to figure out a good way to do 5 gallons on the stovetop (since I still haven't gotten the turkey fryer and bigger pot as I intended when I bought this grain). Thus, I split the recipe between my bigger pot and my water cooler for the mash (staggering the times so that I wouldn't have them finish at the same time), and continued to run them parallel in my big and small brew pots the rest of the way out. Worked pretty well, but I don't think I'll run a 5 gallon AG again until I upgrade my equipment.

Regardless of process challenges, I hit my OG perfectly. RDWHAHB...

  1. Oops... S-04... Yazoo notes on their site that they use "English Ale Yeast", so that seemed like an OK choice. Seems to have worked out pretty darn well, as this one is quite tasty now. I did a side-by-side with Yazoo Dos Perros and they were virtually indistinguishable.

  2. I'm actually downstairs attempting this right now (new to nashville and brewing - first all grain). I'm on my second attempt (first one had off flavors, I'm sure I made mistakes). Any tips? My mash is 158*F For 60min, then I'll boil it for 60min, adding the pearle immediately, then the saaz 5til finish. I saw your homebrewtalk posting. Your first posting you had your temperatures/gallon sizes, the follow up did not, which is why I ask about my current attempt. Thanks

  3. An oversight that I didn't list the temps. I believe I was in the mid 150s for this. Your temps and times look good to me. Let me know how it goes...

  4. Hey bud,

    Tried to do this as an extract and it didn't really pan out. Do you have any tips or a conversation for an extract? I steeped the grains for 30 minutes at about 155, then did the boil for 60 with Pearle and Saaz (60 and 5) and it came out really light and tasted watered down. Waiting to see what happens when active fermentation happens. Any help for future batches would help!

  5. A couple things... For an extract, you'll either need to lose the corn (or maybe add corn syrup or something in its place). A steep of the corn will leave some proteins in the beer. Second, I'll note that Yazoo has reformulated this recipe since the time of writing this, and are now at 5.2%abv on the actual product. I was considering taking another swipe at this, attempting to get to the new specs, but I haven't done that yet. Are you using munich and pale extracts? what's your recipe look like? Be glad to take a crack at some suggestions with the full recipe...

  6. After rereading your post, I think you're OK with the corn, as you essentially did a mini-mash instead of a steep, so, assuming there was some base malt in there, you may have converted OK.
