A steep of the corn will leave some proteins in the beer. Second, I'll note that Yazoo has reformulated this recipe since the time of writing this, and are now at 5.2%abv on the actual product. I was considering taking another swipe at this, attempting to get to the new specs, but I haven't done that yet. Are you using munich and pale extracts? what's your recipe look like? I steeped the grains for 30 minutes at about 155, then did the boil for 60 with Pearle and Saaz (60 and 5) and it came out really light and tasted watered down. Waiting to see what happens when active fermentation happens.
