#57: Cascadian Dark Ale

First brew of 2012. This is a "clean out the pantry" batch if I ever saw one. I totally cleared out every bit of grain I had in seal-a-meal bags and added 5lb of pilsner malt. I also cleared out two opened hop bags. Somehow these always seem to turn out the best. Normal mash temps (155ish) with a 170 sparge.

EDIT: Missed by volume again. Bummer. Thought I had the math right this time. That would be three in a row with that issue, so I'll have to see what I can do to get it right. The OG was spot on again, but the volume was way low, so of course the OG is different after I topped off. As with the last three... RDWHAHB. Numbers adjusted above...

  1. Went ahead and pulled a hydrometer pull of this while doing the others. Short the FG by .01 at this point (4 days in). Taste is roasty and hoppy. Letting it go for another week or so, and then dry-hop with amarillo leaves...

  2. I popped one of these today after two weeks in the bottle. Foamed over, which wasn't unexpected considering the age and the fact that this one was trubbie and had more trub in the bottle than I've seen in any recent brews. I obviously didn't get a clean move to the bottling bucket, as the last three bottles all have a pinky finger of trub (yikes!), but the rest look normal. No matter. This pour is pretty cloudy considering, but dark brown. Two finger head that dissipated to a mm layer that stuck around. Aroma is yeast and hops. Flavor is good considering. A bit bitter, but not as bitter as I suspected. The flavor is roast and amarillo. This one will be good in a few weeks...
